  • Heat oven to 375ºF.
  • Pound chicken to 1/4-inch-thickness on work surface; turn smooth sides down. Mix cream cheese, spinach, 1 cup mozzarella and 3 Tbsp. Parmesan until blended; spread onto chicken. Starting at one short end of each breast, roll up chicken tightly. Secure with wooden toothpicks, if desired.
  • Whisk egg in shallow dish until blended. Combine cracker crumbs and remaining Parmesan in separate shallow dish. Spray 13x9-inch baking dish with cooking spray. Dip chicken, 1 bundle at a time, into egg, then into crumb mixture, turning to evenly coat all sides with crumb mixture. Place, seam sides down, in prepared baking dish.
  • Bake 30 min. or until chicken is done (165ºF). About 5 min. before chicken is done, cook pasta sauce on medium-low heat until heated through, stirring occasionally.
  • Remove and discard toothpicks from chicken. Spoon pasta sauce over chicken; top with remaining mozzarella.

As I tend to make cookies better than I make meals, I pretty much made this as directed & followed other people's advice. For convenience, I used thin-sliced "pre-flattened" chicken breasts. I also added a small can of sliced black olives to a whole jar of chunky mushroom spaghetti sauce and served with bowtie pasta with green beans on the side. My husband loved it! I am not a seasoned cook and was a little worried about how the bundles would turn out (They fall into my category of "fancy") But the recipe was very easy and the bundles looked great and stayed intact! We will definately have this again!

This was so easy and fast. The taste was exceptional,I made it twice in one week and my family devoured it.Try this recipe you won't be sorry. It is also inexpensive to make. I changed the last part from tomato sauce only because I wanted to try something different. After baking the chicken at exactly 30 minutes,I removed the chicken and added 1/2 cup of white wine to the pan till it was half the liquid,I then took a cup of chicken broth and added a heaping tablespoon of flour to and mixed it well and then added it to the pan with the wine and cooked it for about 5 minutes stirring often till it slightly thickened.I added the juice of a 1/2 of lemon to the broth.I served this sauce on the side for passing around. It was wonderful.

Rated 5 out of 5 by from We absolutely loved this recipe! We absolutely loved this recipe!! I used regular chicken breasts fileting the breasts in half and pounding each to 1/4 inch (this was time consuming as I've never done this before.) I basically made the recipe exactly as instructed however I did reserve 3 chicken rollups to bake without the cracker crumbs (diet food for mom,) and they all turned out great!! I did refrigerate the uncooked rolled up chicken for about an hour before cooking and increased the time cooked for another 5 minutes and my rollups stayed together perfectly. I would definitely make this again but it does take some preparation.

Rated 5 out of 5 by from This is actually my second time making this - this time at my boyfriend's request! This is actually my second time making this - this time at my boyfriend's request! They are delicious - easy to make once you can get all of the separate bowls down (sometimes I get too anxious to read all the way through ahead of time) :) I recommend making it with a side of pasta to help bring in the pasta sauce topping and to help with a side dish. Last time we went with rice but this time we're going for bow ties. All in all though, superb! I made it the first time with the Neufchatel Cheese and this time I'm making it with regular cream cheese but I'm not expecting it taste any less superb!

Rated 5 out of 5 by from This is SOOO yummy! This is SOOO yummy! My picky eaters ate it right up! Imade this for my mother-in-law one evening and she loved it and asked for the recipe! Make sure you plan for clean-up also! I made this ahead, covered it and put it in the fridge for 4 hours before baking. That gave me lots of time to clean-up the dishes. I have made this with many sides and it seems to go great with everything so far.

Rated 5 out of 5 by from I have made this a few times now. I have made this a few times now. I make several of these ahead of time to the breadcrumb stage and freeze individually. I have the pasta sauce measured out and frozen in containers. Only problem with this method, my husband is always requesting it.

Rated 5 out of 5 by from I can't believe I was able to make this restaurant quality dish. I can't believe I was able to make this restaurant quality dish. It is so good and a nice break from standard Italian dishes. I do use more of the egg and cheese filling and cracker coating than stated, but everything else is the same. I make this all of the time and my family loves it.
