  • Cook chicken in large nonstick skillet on medium-high heat 3 to 4 min. on each side or until cooked through. Season with the salt and pepper.
  • Mix remaining ingredients; spoon onto serving plate.
  • Top with the chicken.

Variation

Do not cut the chicken into strips. Prepare as directed, cooking the chicken 5 to 7 min. on each side or until cooked through.

Substitute

Prepare as directed, substituting 1 large chopped red pepper for the tomato.

Rated 4 out of 5 by from The way I did it turned out very well. The way I did it turned out very well. I just omitted the chicken and used the other ingredients in the rice for a nice side dish. The way I did it also was in a rice cooker with jasmin rice. I cooked the rice and added the other ingredients after the rice had cooked(besides chicken) and had a tasty side.

Rated 4 out of 5 by from This was a great dish. This was a great dish. I did change a few things though. I coated the chicken with flour, grated parm. cheese and garlic powder before cooking it. Then I let the chicken simmer for a bit with the rice mixture and tossed some more of the grated parm.chesse over the chiken while it simmered. Came out great.

I followed all of the instructions, but instead of serving it on the rice I put the chicken on the rice and sprinkled a little more cheese on it and baked it for about 10 minutes. It was YUMMMMMMY

Rated 5 out of 5 by from I loved this recipe. I loved this recipe. It was quick, and it tasted like mediterranean food to me. However, I would recommend adding extra vinagerette because it adds extra flavor. Adding broccoli or another vegetable would be a good idea too.
