  • Heat oil in large skillet on medium-high heat. Add chicken; cook and stir 5 min. or until lightly browned.
  • Add soup, milk and cheese; mix well. Bring to boil.
  • Stir in rice and tomato; cover. Reduce heat to low; simmer 5 min. or until chicken is cooked through. Stir before serving.

Variation - Chicken Parmesan Risotto with Peas

Omit tomato. Add 1 cup frozen peas with the soup.

Substitute

Prepare as directed, using your favorite canned cream soup.

Shortcut

Omit oil. Substitute 2 pkg. (6 oz. each) OSCAR MAYER CARVING BOARD Flame Grilled Chicken Breast Strips, chopped, for the cut-up fresh chicken. Stir the chicken into the skillet with the soup, milk and Parmesan cheese.

To make it even easier: Get boil-n-bag rice Rotisserie Chicken (cut off the bones) 1 can diced tomato with herbs 1 can cream of chicken with herbs 1 garlic clove 1 small onion cook the rice in the microwave, sautee garlic and onion and then add chicken, soup, milk, tomatoes...when combined and rice is done pure the rice in.

Rated 2 out of 5 by from Why do you call this a Risotto, there is not even risotto rice used? Why do you call this a Risotto, there is not even risotto rice used? I suggest using real risotto rice, using a good stock, and a vegetables like tomato or courgettes. To prepare risotto one need to soute the risotto in a bit of oliveo oil, and add the stock bit by bit, so the unique consistacy of risotto is obtained... This probably a nice recipe, but certainly not a risotto!!

Rated 4 out of 5 by from This recipe is a good one. This recipe is a good one. As my husband said, "I like the flavor - there's just a hint of pizazz, but it's subtle." Just make sure you use instant rice - we had to cook ours extra long, and it was still bony. Next time I'll precook the rice (not their fault.) Also, we didn't have a tomato on hand, so I used a can of diced tomatoes, drained. Very good.

Never use the actual items, I try to us the lower sodium soup, part skim shredded MOZZARELLA cheese instead of parmesan and also brown rice. I do like to add ITALIAN SEASONING, which gives it a nice rounded flavor. My husband and son both enjoy this, good hearty meal espically on fall/winter days

Rated 4 out of 5 by from This was a wonderful and easy recipe. This was a wonderful and easy recipe. I think that it needed some more flavor, it was just a timy bit bland. Maybe if I browned the chicken in some zesty italian it would add some good flavor. I served Quick Bruschetta for Two as an appetizer and it paired very well. I will make this recipe again sometime.

Rated 5 out of 5 by from This was excellent! This was excellent! I substituted buttermilk for milk (because that's what I had) and 1/2 of 14oz. canned tomato. It was so wonderful! My step son wants this everytime he visits. He doesn't realize tomatoes are good for him

Rated 3 out of 5 by from This recipe was good, but a little bland. This recipe was good, but a little bland. I added garlic to the chicken while it was cooking, and pepper and extra cheese just before serving. I think it would make a better side dish than a main dish.
