I added 1/2 cup sharp shredded cheddar cheese and 1/3 cup each raisins and walnut pieces. It was excellant and very refreshing. The combination of the poppy seed dressing the pears and the other items was wonderful. The next time I make it I may add sliced mushrooms and dried cranberries instead of the raisins and maybe switch out the cheddar cheese and use feta. I am a variety cook who loves to try different combinations. Thank you for this receipe. It is definately a keeper and one to share with my family and friends.

Rated 5 out of 5 by from I thought I'd never find the creamy poppyseed dressing since it is new. I thought I'd never find the creamy poppyseed dressing since it is new. Finally I found it, made shis recipe for supper and yum, yum yum. The stores had no barlett pears, which we like, so I used a large Jonathan apple. I don't know if the dressing is what made this so delicious or the combination of the ingredients. Either way, my husband and I loved it and will definitely make it again. I could eat this recipe once a week. I used chicken tenderloins,sprayed pam spray on a griddle and cooked them. Then I sliced the chicken, sliced the apple, added the dressing and then the spinach. It may have been a recipe for four, but my husband and I finished it off and let our little Dachshund/Chihuahua lick out the bowl. Yum! Restaurants should serve this reipe! And it was so easy, and healthy! Please show us more wonderful, easy, yummy recipes like this one.

I just received this receipe today, but has all of the good things a person needs for health reasons and am going to do this tomorrow as I have chicken and fresh spinich on hand. My preference as I do not like cooked spinich and I have a friend who also doesn't! I am giving it to him for his receipe box as no PC. I will add a touch of garlic to thiswhen I do it.

I prefer to barbecue my chicken breasts and dice up as a flavor option. For a little spice, I like to add radishes. The texture between the apples, spinish, chicken and radishes are wonderful. Highly reccomend for people in a hurry, but want a filling and healthy meal.

And if I didn't have any nuts on hand I used a few chow mein noodles for crunchyness. Very delicious, easy, good for you salad. Will continue making this recipe, and will continue experimenting withdifferent fruits, and nuts.

I used 2 chicken breast halves cut up instead of just the 1 cup and had this salad on a very hot humid night for supper. Perfect. The taste is so different, cool and refreshing as well as quite pretty to look at. I used a red skin pear which added some nice color.

I sometimes throw in pecans and use different dressings to add a different flavor, usually Ranch or Raspberry Vinegarette. I diffinitely would make this, again.

Reading this recipe, I can see apples and walnuts as a variation. Anytime I can get the kids to eat spinach without a fuss, I'm pleased.
