Chicken with Potatoes Au Gratin & Broccoli

Chicken with Potatoes Au Gratin & Broccoli sounds fancy, but with a 10-minute prep time and 30 minutes in the oven, this recipe is weeknight doable.

What You Need

pkg.  (10.23 oz.) VELVEETA Cheesy Au Gratin Potatoes
pkg.  (10 oz.) frozen chopped broccoli, thawed
 bone-in skinless chicken thighs (1-1/4 lb.)

Make It

HEAT oven to 375°F.

PREPARE Potatoes as directed on package for oven baking; stir in broccoli. Spoon into 13x9-inch baking dish sprayed with cooking spray. Top with chicken.

BAKE 30 min. or until chicken is done (165ºF).

TRANSFER chicken to plate; cover to keep warm. Stir Cheese Sauce into potato mixture. Serve with chicken.

If bone-in skinless chicken thighs are not available, just use regular bone-in chicken thighs and remove the skin yourself. The skin removes easily when pulled using a paper towel for grip.
How to Check Meat and Poultry Doneness
The easiest way to ensure that cooked meat or poultry is done is to check the internal temperature. Using an accurate food thermometer will take away the guesswork. Simply insert the thermometer into the thickest part of the meat or poultry, avoiding any bones if present. For whole poultry, insert the thermometer into the thickest part of one of the thighs, again taking care to avoid any bones.
