Chicken & Roasted Red Potatoes

This dish will make Grandma come to your house for Sunday dinner. Potatoes, onions, bacon and chicken all baked together and topped with melty cheese.

What You Need

1/4

cup KRAFT Classic Ranch Dressing

large bone-in chicken thighs (1-3/4 lb.), skin and visible fat removed

slices OSCAR MAYER Bacon

1-1/2

lb. red potatoes (about 5), cut into 1-inch chunks

onion, cut into 1/2-inch chunks

cup KRAFT Shredded Triple Cheddar Cheese with a TOUCH OF PHILADELPHIA

Tbsp. chopped fresh parsley

Make It

POUR dressing over chicken in shallow dish. Refrigerate 30 min. to marinate.

HEAT oven to 400ºF. Cook bacon in large skillet on medium heat until crisp. Remove bacon from skillet, reserving 1 Tbsp. drippings in skillet. Drain bacon on paper towels.

ADD potatoes and onions to reserved drippings; cook 5 min., stirring occasionally. Remove from heat. Crumble bacon. Add to potato mixture; mix lightly. Spoon into 13x9-inch baking dish. Remove chicken from marinade; discard marinade. Place chicken over potato mixture.

BAKE 55 min. to 1 hour or until potatoes are tender and chicken is done (165ºF). Top with cheese and parsley.

Serve with cooked fresh green beans.

Special Extra

Mix 1/2 tsp. hot pepper sauce with ranch dressing before pouring over chicken.

This reminded me some of Alice Springs Chicken from Outback Steakhouse, but it needs some improvements to be as good as that. My 3 main commetns are: 1) I didn't get any flavor out of the ranch dressing as a marinade. 2) I think you could use any shredded cheddar on this, not just the specific one they suggested. 3) And I would definitely NOT use thighs on the bone again. It was too much work for this type of dish to fight with bone. I would make this again but with the suggested changes.

All of my family members loved this recipe. I did alter this recipe a little. Instead of parsley I put green onions in it. I think the green onions gave it just the right favor.

Made this the first time and everyone left it. I am making it again as I write this. I did add some seasoning to the potatos when they were cooking in the bacon grease

very good! topped it with sour cream and added regular cheddar cheese also doubling the cheese.
