  • Heat oven to 400°F.
  • Cut cheese crosswise in half, then cut each piece lengthwise into 4 sticks. Wrap 1 chicken breast around each cheese stick to completely enclose cheese; secure with wooden toothpicks. Dip chicken roll-ups, 1 at a time, in eggs then in bread crumbs, turning to evenly coat each roll-up.
  • Heat 2 Tbsp. oil in large skillet on medium-high heat. Add chicken; cook 5 min. or until evenly browned, turning occasionally. Transfer to 13x9-inch baking dish sprayed with cooking spray.
  • Bake 15 to 18 min. or until chicken is done (165ºF). Meanwhile, wipe skillet with paper towels. Add remaining oil and vegetables to skillet; cook 8 to 10 min. or until crisp-tender, stirring occasionally. Stir in flour and pepper until blended. Gradually stir in broth; cook 3 to 5 min. or until thickened, stirring constantly. Add rice; cook 2 min. or until heated through, stirring occasionally.
  • Discard toothpicks from chicken. Serve chicken over rice mixture.

Serving Suggestion

Serve with a crisp mixed green salad tossed with your favorite KRAFT Light Dressing.

Substitute

Prepare using KRAFT Sharp Cheddar Cheese.

Variation

Omit wild rice. Increase cooked white rice to 3 cups.

It would not have taked so long if I had read the recipe all the way prior to amking it. Idid double the wild rice and use minute brown rice instead of white (it was what I had). We loved it. This was farely inexpensive and I had everything I needed in my cabinets; no last minute trips to the store! I will be making this a regular for dinner in my house.

Rated 5 out of 5 by from My husband & I really liked this recipe! My husband & I really liked this recipe! I purchased chicken tenders instead of breasts so I decided to not 'roll' the chicken. Instead added shredded cheese on top of the breading for the last 2 min in the oven. I would recommend Italian cheese vs cheddar. The rice is delicious! This meal is time consuming - but I would still make it again :)

I've even used the rice recipe with other meals, although I love the chicken also. I do think the preparation time stated is somewhat short. It takes me quite a while to prepare this, but it's worth it.

Rated 5 out of 5 by from My whole family enjoyed this meal. My whole family enjoyed this meal. My husband doesn't like melted "yellow" cheese, so I substituted mozzerella in the middle. I've also made it without rolling the chicken breasts and just melted shredded cheese on top. Very good.
