How to Toast Nuts

Toasting nuts adds crunch and intensifies their flavor. To toast nuts in the oven, spread nuts in single layer in shallow baking pan. Bake at 350°F for 8 to 10 min. or until golden brown, stirring occasionally. To toast nuts on the stovetop, place nuts in ungreased skillet. Cook on medium heat until golden brown, stirring frequently. To toast nuts in the microwave, place up to 1 cup of nuts in a microwaveable shallow dish. Microwave on HIGH until fragrant and crisp, stirring every 30 sec.

Shortcut

Prepare using a store-bought rotisserie chicken or leftover cooked chicken.

The version I usually make omits the onion, but includes apple chunks, halved grapes, celery, and toasted pecans (a la Arby's Chicken Salad.) But I've never tried it with sour cream in addition to the mayo. By the way, you can make a really good tropical variation w/chopped dried tropical fruit (mango & papaya), pineapple tidbits, celery, water chestnuts, and cashews (or chopped macademias would be awesome!) The more fruit & veggies you add, the more you stretch that chicken. Either variation is a great way to dress up a can of chicken, btw.

I like to make different variations with dried cranberries, golden raisins, or pickled celery. You can also try using flavored mayo (like italian herb, chipotle, or dijon) for a change too.
