Fabulous! I added some chopped peanuts and extra cilantro. My entire family loved this recipe. My picky little son couldn't wait to try chicken that had "peanut butter". He even asked for seconds. Can't wait to make this again.
This time I used almond butter and whole chicken breast. I fried it about five minutes on each side, then wrapped each chicken in foil to finish cooking in the oven. Magnificent! The almond butter was milder and the chicken, oh so tender.
