  • Heat oil in large deep skillet on medium heat. Add chicken; cook and stir 8 to 10 min. or until done.
  • Add spinach, rice, tomatoes and broth; mix well. Bring to boil; cover. Simmer on low heat 5 min., stirring occasionally.
  • Stir in cheese.

Substitute

Substitute 1/2 cup dry white wine for 1/2 cup of the broth. Please use alcohol responsibly.

    Needs seasoning. I used a bit of oregano and basil, and salt and pepper were essential. A touch of red pepper flakes, perhaps. I didn't have quick rice (**** it), so adjusted for regular rice (just made it separately with the chicken broth and added after the spinach wilted). Photo shows the chicken seared, so I'd probably work that into the recipe at the beginning. This dish has potential for greatness and quickness. Someone with seasoning skill would probably make this awesome.

    I made this tonight and I also tweaked it to try and improve the flavor. I used canned Italian tomatoes and seared the chicken in dressing. Although my family said it was good, it just wasn't a big hit. I'd probably make it again if I had the ingredients and nothing else was available.
