  • Heat oven to 400ºF.
  • Mix stuffing mix, hot water and cheese just until stuffing mix is moistened.
  • Place chicken in 13x9-inch baking dish. Mix soup and spinach; spoon over chicken. Top with stuffing mixture.
  • Bake 30 min. or until chicken is done (165ºF).

Substitute

Prepare using 3 cups chopped fresh spinach.

Rated 5 out of 5 by from This was so easy to make, and it was wonderful. This was so easy to make, and it was wonderful. I made a few alterations to the recipe though. I used cream of mushroom soup instead of cream of chicken. With the chicken breasts and chicken stuffing, I thought that would be too much chicken flavor. I also used mixed vegetables (broccoli, cauliflower, and carrots) instead of spinnach. It was very hard to find frozen spinnach for some reason. And I also used "fiesta blend" cheese instead of parmesan in the stuffing. Although I haven't had it following the recope exactly, it was pretty much the same thing. My boyfriend told me about 10 times while he was eating it how good it was.

With a newborn running the house now, I need very quick and easy recipes that are also delicious and filling for the whole family. This recipe hit the spot! Extra easy and fast, it went into the oven in no time and it smells wonderful while baking. The chicken is juicy and tender and the stuffing on top has the perfect crunch. The cheesy spinach makes this recipe five stars. This recipe is now in my top ten make-it-again recipe file!

Rated 4 out of 5 by from This was so good! This was so good! I cut two huge breasts into eight pieces,and they cooked perfectly in 30 min. Used cream of mushroom with garlic soup, 1/4 cup sour cream and two splashes of tabasco for more flavor. Used a 6oz box of stuffing. The stuffing makes a nice crunchy topping. Although there are salty ingredients, we didn't find the dish too salty. Easy comfort food!

I adapted it for the crock pot- added a bit more liquid & layered the ingredients: suace & spinach mix, 2 chicken breasts, more spinach sauce mix, 2 more chicken breats, rest of sauce, top with stuffing & cook on high for 2-3 hours (check chicken after 2 hours) I also sprinkled stuffing with a little garlic powder for a little more kick- ROOMMATES LOVED IT!!

Rated 3 out of 5 by from This recipe was okay. This recipe was okay. I put the stuffing mixture on the bottom of the pan, then the chicken and then the soup and fresh spinach mixture on top. The stuffing was pretty mushy but still had good flavor. A little too high in calories than I would normally prefer and I would probably put the stuffing on top next time and see if it would be less mushy.

I made 3 cups stuffing and put some on the bottom of the dish with the chicken on top. I added 1/2 cup sour cream to the spinach mix and used only 8 oz of the thawed spinach. This came out wonderful! At the last 12 minutes of baking I added halved cherry tomatoes and a top sprinkle of the parm cheese.

It did take longer than 30 minutes to cook, but smelled wonderful while cooking. In the future I think I would brown the chicken a little before baking to speed cooking time and perhaps add a can of Italian style diced tomatoes (drained) to the spinach/soup mix. Highly suggest this recipe!

I substituted pre-cooked cut up chicken breasts and added two cans of soup; one mushroom and one cream of chicken. It went over well with everyone, except my husband, who thought the spinach was over powering. Using 2 cans of soup worked great for me, otherwise I might cut the spinach so it's not such a strong flavor.
