  • Heat oven to 350°F.
  • Heat oil in large skillet on medium heat. Add chicken and onions; cook and stir 8 to 10 min. or until chicken is done. Add Seasoning Mix and water; stir. Bring to boil; simmer on medium-low heat 10 min., stirring occasionally. Remove from heat; stir in corn and sour cream.
  • Cover bottom of 13x9-inch baking dish sprayed with cooking spray with 5 Tortillas; top with 1 cup cheese, chicken mixture and remaining tortillas. Drizzle with Taco Sauce.
  • Bake 15 min. or until heated through. Sprinkle with remaining cheese; bake 5 min. or until melted.

I added spanish rice to it before adding the chicken mixture and served it with a salad. I will probably try it with red peppers and onions next time. I also topped it off with chopped tomatoes and a little bit of light sour cream. It has a wonderful flavor. My 2 yr old daughter just enhaled hers and she is a VERY picky eater. Overall we really enjoyed this dish and would definitely make it again.

Rated 4 out of 5 by from This recipe was pretty good. This recipe was pretty good. Instead of buying the soft taco kit, I substituted the soft taco shells, a package of seasoning, and salsa. I plan on making it again, but when I do, I will actually roll the mixture inside the shells and then bake per the recipe. I had problems cutting through all those layers of taco shell.

This recipe was in my email today and since I needed something quick, I went and bought the ingredients and WOW! This was absolutely delicious. My two guys really enjoyed it. You can also reserve two of the tortillas and slice them up, and add them as a middle layer. It was an excellent way to dress up leftover chicken!

I used a package of soft taco shells and a taco seasoning mix as I could not find a Taco Dinner kit . I added a layer of precooked rice and a tin of kidney beans the second time I made it. Delicious!

Next time I will add a cup of salsa to the chicken mixture for added flavor and nutritional value. I added dried cilantro to the chicken mixture for spice.
