  • Heat oil in large skillet on medium-high heat. Add chicken and onions; cover. Cook 10 to 14 min. or until chicken is done (165ºF), turning after 6 min. Remove chicken from skillet; cover to keep warm.
  • Add tomatoes, dressing and lemons to onions in skillet; cook 4 min. or until heated through, stirring frequently.
  • Return chicken to skillet. Spoon sauce over chicken. Cook 1 min. or until chicken is heated through; top with cheese.

Serving Suggestion

Serve with hot cooked penne and steamed spinach.

For garlic lovers, add 1 minced garlic clove with the tomatoes.

    I made mine with smoked sausage. Very good but hard to keep lit.

    I can't emphasize enough, how great this recipe is! I've made it several times and can't wait until I do it again. It makes the best sauce, perfect for rice, noodles or mashed potatoes. I sauté garlic with the onions and add 1/2 c. white wine to the tomatoes. I use 2 lbs. of bone-in, skinless thighs and they come out moist and perfect. I have a covered 12" cast iron skillet and simmer them in the sauce a little longer. I use Robusto Italian dressing and half a sliced lemon. Top with feta and it's perfection!

    Very tasty. I used a dash of lemon juice instead of a real lemon. Make sure to sear the chicken first, otherwise it comes out a bit pasty looking.
