Meals this easy to put together shouldn't be so tasty. I used cannellini beans for a sweeter taste and more Italian slant. Delicious.
I have made this twice so far, and love it! I put my own variations in it, but this is a good basic recipe to start or leave as it.
It freezes really well too....since I make a HUGE stock pot of it, we always have leftovers for later.
I'm going to try potatoes next time. It's really simple & easy especially if you use canned beans & canned diced tomatoes. Served with a loaf of Italian bread, it's a meal in itself and VERY filling. I made some last week & had company, they loved it as well.
