  • Cook onions in dressing in medium saucepan on medium heat 3 min., stirring occasionally. Add chicken and garlic; cook 5 min. or until chicken is no longer pink, stirring occasionally. Stir in tomatoes and basil; simmer 8 min. or until chicken is done.
  • Add beans; stir. Cook 2 min. or until heated through, stirring occasionally.
  • Serve topped with cheese.

Note

Using no-salt-added beans eliminates the rinsing step of the beans. And as a bonus, the beans add nice texture to this hearty stew.

    Meals this easy to put together shouldn't be so tasty. I used cannellini beans for a sweeter taste and more Italian slant. Delicious.

    I have made this twice so far, and love it! I put my own variations in it, but this is a good basic recipe to start or leave as it. It freezes really well too....since I make a HUGE stock pot of it, we always have leftovers for later. I'm going to try potatoes next time. It's really simple & easy especially if you use canned beans & canned diced tomatoes. Served with a loaf of Italian bread, it's a meal in itself and VERY filling. I made some last week & had company, they loved it as well.

    Too much tomato taste!!! I added chicken broth, and some elbow macaroni and used cannellini beans instead of navy beans. IF YOU LIKE THIS RECIPIE you need to try "Easy Italian Stew" that is on this website. It is SIMILAR, BUT MUCH BETTER! - 30+ yr. cook.
