Lentils, which come in a variety of colors including yellow, reddish orange, green, brown and black, contain 26% protein, which makes them second only to soy beans in their level of protein. And because of this protein content, they are an important part of the diet in many parts of the world.
When cooking lentils, sort them first by spreading them onto a flat surface and discarding any that are damaged. Then, place the remaining lentils in a fine-mesh strainer and rinse well until the water comes out clear. The quantity of water or broth needed for cooking the rinsed lentils depends on the cooking method used as well as what other ingredients are added to the recipe.
