This is a great dish to make ahead of time and take to a potluck dinner. If desired, recipe can be doubled. Just prepare as directed, doubling all ingredients.
I made the chili using beef and it was really good. Cooked the ground beef and veggies and added the other ingredients without heating. Stored in the fridge so I could heat the next day and it was excellent!! The only thing I would change is to add an extra tsp of chili powder and 1 can (14.5 oz) of tomato sauce. I prefer my chili a bit saucier than what the recipe states.

This recipe was great! I'm a vegetarian and I used boca ground crumbles instead of the rice suggestion. Turned out awesome. I've been looking for a great vegetarian Chili recipe, and this is it.
