  • Mix dressing, sugar and soy sauce until blended. Dissolve 1 Seasoning Packet (from ramen soup package) in hot water. Add to dressing mixture; mix well. Discard remaining seasoning packet or reserve for another use.
  • Break Ramen Noodles apart; place in large bowl. Add coleslaw blend, chicken and nuts; mix lightly.
  • Add dressing mixture; toss to coat.

Make Ahead

Dressing can be prepared ahead of time. Refrigerate up to 24 hours before using as directed. Noodles can also be crumbled ahead of time; store in resealable plastic bag along with the nuts at room temperature until ready to assemble salad. Or for a soft noodle salad, refrigerate prepared salad at least 1 hour before serving.

How to Shred the Cooked Chicken

Use your hand or a fork to hold the cooled cooked chicken breast. With another fork, pull pieces of chicken off the breast into thin shreds.

I just finished making it and I wanted to try it while it's crispy and it is absolutely wonderful! I followed the recipe exactly except for the chicken, I took 2 boneless chicken breasts and chopped them into bits, then I added garlic, onion and lemon pepper to my chicken while it was frying (in alittle olive oil). Then I added the chicken to the salad and it was absolutely wonderful! I'll definitely be making this more often!

But I noticed a bunch of comments saying that it could get liquidy at the bottom and I noticed that, you just have to stir it up before you serve it, and each time you go to serve it. Stir it maybe once more for good luck before you throw it back in the fridge. Then when the leftovers are sitting out overnight you shouldn't get that pool of dressing in the bottom.

I doubled the dressing mix and used the extra as a dipping sauce extra chicken I made for my 5 year old son who does not like slaw. I substituted the peanutes with sesame seeds, it was a hit. However, I will wait till I am ready to serve the dish before I put the dressing on next time, it got soggy.

Rated 4 out of 5 by from Very tasty! Very tasty! I poached the chicken with garlic and ginger powder first, then toasted the ramen noodles and substituted almonds for peanuts in this recipe. Also, I let the dressing and cabbage sit together for a while, then tossed the noodles and nuts just before serving for different textures.

Rated 4 out of 5 by from Great salad! Great salad! I omitted the chicken to make this a side dish for a pork tenderloin. I also added a small can of mandarin oranges and used slivered almonds instead of the peanuts. My husband & guests LOVED it! I will surely make it again!
