"Chinese Take-Out" Lemon Chicken

  • Mix dry gelatin mix and cornstarch in small bowl. Add broth, dressing and garlic; stir until gelatin is completely dissolved.
  • Heat oil in large skillet on medium-high heat. Add chicken; cook 4 min. or until done, stirring occasionally. Add snow peas and peppers; cook and stir 2 min.
  • Stir gelatin mixture; add to ingredients in skillet. Cook on medium heat 3 min. or until sauce is thickened, stirring frequently. Serve over rice.

Shortcut

Substitute 2 pkg. (6 oz. each) OSCAR MAYER Deli Fresh Grilled Chicken Breast for the cooked fresh chicken strips. Heat oil in skillet as directed. Add chicken, snow peas and peppers; cook 3 to 5 min. or until chicken is heated through and vegetables are crisp-tender, stirring frequently. Continue as directed.

Special Extra

Add 1-1/2 tsp. minced fresh gingerroot or 3/4 tsp. ground ginger along with the broth, dressing and garlic.

Substitute

Serve over hot cooked long-grain brown rice.

I think that this recipe is a good starting point but you definitely would want to add to it. Basically it's just chicken stir fry . You can add or omit anything you would like. I add a few drops of sesame seed oil , soy sauce, onions, water chestnuts, bamboo shoots, bean sprouts. It wouldn't hurt to add some lemon zest and or a tablespoon of lemon juice it you want a little more hint of lemon.. I also like this on yakisoba noodles in place of the rice once in a while. Anyway, like with all recipes you'll want to experiment and find what you and your family likes the best.,

I used the sugar free gelatin and also added 1 tablespoon of soy sauce and 1/4 teaspoon of red pepper flakes to the broth mixture. I'm always looking for new things to do with chicken breasts and this recipe will now be added to my list of meals to make.

So I added some soy sauce and honestly that did the trick. It tastes just like we ordered this at our local Chinese restaurant! Will definitely make this again!
