Apricot preserves and cream cheese are the perfect mellow foil for chipotle peppers in this fiery sweet dip.

What You Need

pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened

1/2

cup apricot preserves

chipotle pepper in adobo sauce, finely chopped

Tbsp. water

green onion, finely chopped

RITZ Crackers or RITZ Snowflake Crackers

Make It

SPREAD cream cheese onto bottom of pie plate.

COOK preserves, peppers and water in saucepan on medium-low heat 5 min. or until preserves are melted, stirring occasionally. Stir in onions; spread over cream cheese.

SERVE with crackers.

Substitute

Prepare as directed with PHILADELPHIA Neufchatel Cheese.

How to Soften Cream Cheese

Place completely unwrapped package of cream cheese in microwaveable pie plate. Microwave on HIGH 15 sec. or just until cream cheese is softened. Spread onto bottom of pie plate, then continue as directed.

Variation

Preserve mixture can be cooked in the microwave instead of on top of the stove. Microwave preserves, peppers and water in microwaveable bowl on HIGH 1 min. or until heated through, stirring every 30 sec. Stir in onions, then continue as directed.

Is this served hot or cold? I bought all the ingredients and plan on making it for Christmas Eve but unsure how it's to be served.

Tasty! You can get a 7 oz. can of chipotle in adobo sauce at your local supercenter.

Where does one find chipotle in adobe sauce? This sounds delicious and I have a potluck coming up. But I don't think I've ever seen that!

I made this for our book club and served with crackers. It was a hit! Noting the one rater who mentioned the heat, I used a little additional apricot preserve to the chipotle ratio. The mixture did seem a little thinner than the picture, so covered the entire top of the cream cheese. Very tasty, and easy so I plan to make again.

We went to a tailgate party and I brought this spread with crackers. Half an hour later, the hostess jokingly asked me where the other dish of spread was--they had finished it before I even got to the table.
