Place plate over chilled dessert in tube pan. Invert cake onto plate. Gently remove tube pan; spoon any remaining dulce de leche in pan over dessert.
Substitute cajeta for the dulce de leche. Since the sauce has a thinner consistency, it will be absorbed by the rompope as the dessert bakes producing a slightly different, though equally delicious, end product.
