  • Heat oven to 350ºF.
  • Whisk egg and dressing in large bowl until blended; stir in zucchini. Combine remaining ingredients in separate bowl. Add to zucchini mixture; stir just until moistened.
  • Pour into 8x4-inch loaf pan sprayed with cooking spray.
  • Bake 50 min. or until toothpick inserted in center comes out clean. Cool bread in pan 10 min. Remove from pan to wire rack; cool completely.

Rated 4 out of 5 by from I made this recipe, but with some substitutions. I made this recipe, but with some substitutions. I used whole grain flour and 3/4 cup of sour cream instead of mayo. The texture is a little odd, but I think that's due to the zucchini and the flour I used. It tastes good and smells great!
