  • Mix corn syrup, sugar and water in large saucepan. Bring to boil on medium heat, stirring until sugar is dissolved. Stir in coconut. Continue boiling, without stirring, until temperature on candy thermometer reaches 236°F. Drop teaspoonfuls of the coconut mixture onto large sheet of wax paper. Cool.
  • Meanwhile, microwave chocolate in medium microwaveable bowl on HIGH 2 min. or until chocolate is almost melted, stirring after 1 min. Stir until chocolate is completely melted. Cool until temperature on candy thermometer reaches 83°F.
  • Dip coconut balls into chocolate, turning until completely covered. Return to sheet of wax paper; let stand until chocolate is firm.

If you don't have a candy thermometer, remove a small amount of the hot sugar mixture and add to cold water. If the syrup forms a soft ball, then the syrup is at the right temperature.

Rated 2 out of 5 by from I had problems with this recipe. I had problems with this recipe. when I mixed in the coconut, I let it sit there. There didn't seem to be anything there to boil, it was sort of lumpy, the coconut soaked up all the moisture. While it sat there, it started to smell burnt and it was getting really brown. Put in fridge so chocolate wouldn't melt. Candy turned out hard after sat out awhile and I couldn't chew or bite it. What did I do wrong? Any suggestions? Would like to try again maybe.

Rated 4 out of 5 by from Me, I don't like coconut. Me, I don't like coconut. But I'm not going to give it a bad rating because of that. The people whom I gave it to loved it. But concerning preparation, this was the hardest thing I've ever made...I burnt the sugar and had to handle the extremely hot coconut and syrup with my fingers, and then I got all messy with chocolate. Oh well, the people liked it!

I had to make a double batch the next day. It is wonderful. Not an easy recipe for beginners but the second time was a breeze. Will be making it again and again

Rated 5 out of 5 by from These are awesome. These are awesome. The best treat I have made in awhile. I would recommend putting the coconut and sugars recipe in the fridge to cool and harden for a few hours. Then it is much easier to handle.
