Shelled Brazil nuts can be purchased at specialty grocery stores.
Place nuts in large saucepan; cover with water. Bring to boil. Cook 3 min.; drain. Immediately add nuts to bowl filled with ice water. Let stand 2 min. Crack nuts to remove the shells. Place shelled nuts in shallow baking pan. Bake at 400°F for 10 min., stirring after 5 min. Cool slightly. Using a clean kitchen towel, rub off the skins.
When purchasing unshelled nuts, look for nuts that are heavy for their size with solid uncracked shells. Shelled nuts should be crisp, plump and uniform in both size and color.
