Chocolate-Marshmallow Rice Pudding

  • Bring rice and water to boil in medium saucepan on medium-high heat. Reduce heat to low; cover. Simmer 10 to 15 min. or until water is absorbed.
  • Add milk, chocolate, sugar and vanilla; stir. Bring to boil. Reduce heat to low; cook 20 to 25 min. or until thickened, stirring occasionally. Remove from heat; pour into large serving bowl. Cool slightly. Cover and refrigerate 2 hours or until chilled.
  • Reserve a few marshmallows for garnish, if desired. Stir remaining marshmallows into pudding just before serving; top with whipped topping and the reserved marshmallows. Store leftover pudding in refrigerator.

Cooking Know-How

For rice pudding the consistency of arroz con leche, add up to 1 cup of milk until pudding is of desired consistency. Adjust sugar accordingly.

    This wasn't very good. Makes a huge bowlful and doesn't hold up well left over, we had to throw most of it away, and the ingredients are too expensive to waste.
