What You Need

pkg. (3.9 oz.) JELL-O Chocolate Instant Pudding

cups cold milk

1/4

tsp. peppermint extract

cup thawed COOL WHIP Whipped Topping

drops green food coloring

Make It

BEAT pudding mix, milk and extract with whisk 2 min.

WHISK COOL WHIP and food coloring until well blended.

LAYER pudding alternately with COOL WHIP in 6 parfait glasses. Refrigerate 15 min.

The best way to thaw frozen COOL WHIP Whipped Topping is in its container in the refrigerator. Depending on the size tub you have, the thawing time varies. Recommended thawing times are: 8-oz. tub - 4 hours; 12-oz. tub - 5 hours; 16-oz. tub - 6 hours. We DO NOT recommend thawing COOL WHIP Whipped Topping in the microwave.

This is a quick, easy and very tasty dessert. I used sugarless pudding and low-fat Cool Whip, so it is also a figure-friendly end to a meal. I only got 5 dishes out of the recipe, however, and 3 layers - 2 chocolate and one of the cream.

I made this for my son's st. patrick's day party and everyone loved it. layering is a bit tedious, and I had to use alot more coolwhip than the receipe calls for. I think next time I will only do two layers instead of four, but it tastes great! Will make again.

I made this dessert twice. The first time I made it in my gifted class and it tasted great. The second time I made it, it was not to good. I added way to much peppermint extract. The first time was good though.
