Chocolate-Peanut Butter Truffles

So easy and so delish!! It didn't take nearly as long as I thought it would to roll the truffles. I used my small-sized cookie scoop so that made things quicker. They were a big (chocolatey and peanut buttery) hit!

This recipe is terrific. The only thing I do different is I make them into squares and I freeze the mixture before serving. It holds better otherwise it is too soft. This is my third year making them for the holidays and enjoyed by all in my family.

Make these all the time and everyone loves them! These are especially nice for holiday gifts as they look extravagant. I am asked for the recipe every time I make them.

I make a double batch of these truffles every year at Christmas and everyone loves them. I've tried other truffle recipes, and this one is the best tasting and economical to make. I have an easier, less messy way of making them. I wear latex gloves, the medical disposable ones found in drugstores. Then I use a teaspoon to scoop out the chocolate mixture, and roll the chocolate mixture in the palms of my hands to make perfectly round balls. I make all of the balls from the mixture first, and then I roll them in the toppings. I have three bowls set up with chopped nuts, coconut, and Christmas sprinkles. I do a portion of them in each of the toppings, one topping at a time. This really cuts down on the mess. Your gloved hands have chocolate on them, but you can wash your gloved hands, or pull off the gloves, and your hands stay clean! These are really worth the effort. These were good, but extremely messy to make. The instructions to use a melon baller or teaspoon to shape into 1-in balls is a joke. I had to roll with my hands and it made it very, very messy. They tasted good, but I won't be making them again.

Yum! I am rarely in the kitchen, but I made these tonight, and my hubby thought they were fabulous - I will be making these in the future. Very good for chocolate lovers. :-)
