Maybe it's the altitude, but these little suckers are kind of hard to roll into a ball without it collapsing. These were good on their own, but I thought some peanut butter would really make them shine. So, I mixed about a 1/2 cup of creamy peanut butter with an electric mixer until it was fluffy. I loaded it into a zip-top bag and piped it onto every other cookie bottom to make sandwich cookies. Yum!

Rated 5 out of 5 by from I haven't seen this receipe since 1996. I haven't seen this receipe since 1996. I am so happy i dont add the sugar. The pudding has enough. I use all different flovors of pudding. at Christmas, i use pistachio and add a red hot. I like banana and chocolate at Easter. I mold the two doughs together and shape like eggs. These cookies are esay and versatile making them one of my all-time favorites.

Because they are so quick and easy I can bake them on a whim or request. I've tried lemon puddiing for a change. The ingredients are usually always at hand and they are good for a quick chocolate fix.

Maybe some powdered sugar instead of regular sugar would be better and the pudding really had no flavor to it. Adding chocolate chips too might have livened it up a bit.
