Chocolate Pudding Poke Cake

What's better than chocolate pudding on top of a cake? How about chocolate pudding IN that same cake? Even more impressive, this can even fit into your smart eating plan.

What You Need

pkg. (2-layer size) white cake mix

1-1/3

cups water

egg whites

pkg. (1.4 oz. each) JELL-O Chocolate Fat Free Sugar Free Instant Pudding

qt. (4 cups) cold fat-free milk

Make It

HEAT oven to 350ºF.

BEAT first 3 ingredients with mixer until well blended. Pour into 13x9-inch pan sprayed with cooking spray. Bake 35 min. or until toothpick inserted in center comes out clean. Immediately poke deep holes in cake at 1-inch intervals, using handle of wooden spoon.

BEAT pudding mixes and milk in large bowl with whisk 2 min.; pour half into holes in warm cake. Let remaining pudding stand until slighty thickened. Spread over top of cake.

REFRIGERATE 1 hour.

Variation

Instead of using handle of wooden spoon to poke holes in cake, use a plastic drinking straw with turning motion to make large holes.

Make this cake with the fluffy pudding frostinng....DELICIOUS!! So good on a hot summer day.

I have diabetes so I'm not allowed sugar & this cake has 17 rams of sugar but it looks sooo good. Ellen

My problem with the cake was I made the pudding mix and it sat while the cake baked. It thickened and did not pour down into the cake very well. I forced it but, overall, we ended up just eating the top half of the cake.

This is a great cake. I used butterscotch pudding and it made for a light (less filling) dessert than you typically expect from cake.

I did cupcakes instead of the pan cake. Although it was more difficult to make since I couldn't directly pour the thin pudding mixture in the pan, it was still good. The cake was moist and bitting into it and having the pudding come out was just neat. My family absolutely loved it. I will definitly make this again, but next time I will make it as a cake instead of cupcakes.

My kids absolutely loved this cake and had no idea that it was a "better for you" cake. They ask for it often and since it is so easy and I don't have to feel guilty about giving it to them it's a win/win!
