The best varieties of pears for salads are Bartlett, Anjou, Bosc and Comice. Make sure the pears are perfectly ripe to ensure a sweet flavor and juicy texture.
Pears do not ripen well on the tree, so they are picked when mature, but not yet ripe. To ripen fresh pears at home, place them in a paper bag, fold over the top and store at room temperature for 1 to 3 days. To test for ripeness, apply gentle thumb pressure at the base of the stem. If the fruit yields slightly, the pear is ripe. Use immediately or store in the refrigerator for up to 1 week.
