  • Heat oven to 350ºF.
  • Beat first 4 ingredients with mixer until blended. Drop 2 Tbsp. batter, 2 inches apart, into 32 mounds on baking sheets sprayed with cooking spray. Bake 10 min. or until toothpick inserted in centers comes out almost clean. Cool on baking sheets 3 min. Remove to wire racks; cool completely.
  • Beat cream cheese and marshmallow creme in large bowl with mixer until blended. Add COOL WHIP; beat on low speed just until blended.
  • Spread about 2 Tbsp. COOL WHIP mixture onto bottom side of each of 16 cookies. Top with strawberries and remaining cookies.

Prepare using a yellow cake mix and reducing oil to 1/3 cup.

    Coincidently, the chocolate cake mix I bought to make these had a Whoopie Pie recipe on it. Same ingredients for the cake but said to mix for 2 minutes and bake 7-9 minutes. I followed the cake mix instructions and baked for 7. Mine did not come out very flat - more mountain shaped. Maybe should have baked longer. Did not find too sticky (I served with a fork), except I stacked them after cooling and they stuck a bit to each other. I followed recipe exactly for filling and got at least 3 Tbsp (some 4) for each pie. I used mixed berries (strawberries, blueberries an blackberries) because I had them in fridge

    cake part of this recipe sticky, making it hard to work with the filling. Was wondering if any one has tried a light freeze on the cake part after it cooled to see if this helped putting the filling in or do you think after doing this would make cake part more sticky when picking up to eat then is already? Think I'll give it a try and see what happens. They're tasty no matter what.
