  • Microwave chocolates and butter in medium microwaveable bowl on HIGH 1-1/2 min. or until butter is melted, stirring after 1 min. Stir until chocolate is completely melted and mixture is well blended. Add whipping cream and vanilla; mix well.
  • Refrigerate 3 hours or until firm.
  • Shape teaspoonfuls of the chocolate mixture into 36 balls. Sprinkle evenly with fleur de sel; press gently into top of each truffle to secure.

Fleur de sel (flower of salt) is a finishing salt. Harvested by hand, these young crystals occur naturally on the surface of salt evaporation ponds. They are light, flaky and melt on your tongue instantly giving you a brief, delicate yet intense hit of salt. It brings out the flavor of food without a heavy salt hit. The closest substitution would be a 2 tsp. coarse sea salt or kosher salt.
