Fleur de sel (flower of salt) is a finishing salt. Harvested by hand, these young crystals occur naturally on the surface of salt evaporation ponds. They are light, flaky and melt on your tongue instantly giving you a brief, delicate yet intense hit of salt. It brings out the flavor of food without a heavy salt hit. The closest substitution would be a 2 tsp. coarse sea salt or kosher salt.
