  • Fry tortilla strips in oil in large skillet until golden, but not crisp. Drain on paper towels. Remove excess oil from skillet.
  • Cook chorizo in skillet on medium heat until lightly browned; drain. Add onion and peppers; cook 2 minutes. Stir in tomatoes; cook 2 minutes.
  • Add fried tortilla strips and eggs to skillet. Cook until eggs are almost set, stirring occasionally. Sprinkle with cheese; cover. Cook 1 to 2 minutes or until cheese is melted.

Serving Suggestion

Serve this main dish with a crisp, mixed green salad.


Substitute 6 slices OSCAR MAYER Bacon, cut into 1-inch pieces, for chorizo sausage.

    My sister made this recipe this morning. It is absolutely delicious! We both love chorizo and it was the perfect dish to make for breakfast. She omitted the jalepenos since some people in our family do not like spicy food and she used roma tomatoes instead of plum tomatoes. We will definitely make this dish again!

    Migas is absolutely delicious! I am a huge fan of chorizo and my mother would make chorizo and scambled eggs when my twin sister and I were growing up. Even though I omitted the jalapeno peppers, the migas were delicious, anyway! I will definately make this recipe again!
