  • Make 3-inch-long cut in one long side of each chicken breast to form pocket, being careful to not cut all the way though to opposite side of chicken. Place chicken in bowl; drizzle with 1/4 cup dressing. Refrigerate 30 min. to marinate.
  • Heat oven to 375°F. Combine cracker crumbs, 1/4 cup cilantro, garlic and remaining dressing. Remove chicken from marinade; discard marinade. Spoon about 3 Tbsp. crumb mixture into pocket in each chicken breast; place on foil-covered baking sheet sprayed with cooking spray.
  • Bake 25 min. or until chicken is done (165ºF). About 5 min. before chicken is done, cook tomatoes just until warmed.
  • Combine cheese and remaining cilantro. Top chicken with tomatoes; sprinkle with cheese mixture.

I wasn't impressed but I think it may have been my fault. I love the flavor of Cilantro so I might have overdone it because that is all I tasted. I think the Ritz cracker inside had a lot of potential if it wasn't for my heavy hand.

The only thing I changed was that I added some of the parm cheese to the stuffing mixture and used fresh grape tomatoes instead of canned because I had some to use up. This was really delicious, moist and fresh tasting. My husband said it's the best chicken I've made in a long time. Winner!

This was great, easy to prepare, not too much time and staple ingredients that most have in the pantry. The only thing not on hand is the cilantro. Next time I am going to use bread crumbs for slight coating on exterior of chicken.

Recomiendo tener sembrado cilantro en una macetita en casa, para tenerlo siempre fresco y utilizar solo el necesario. Lo acompañé con espaguetti blanco.
