  • Heat oven to 350°F.
  • Beat cake mix with eggs, oil and coffee in large bowl with mixer until blended. Pour evenly into 2 greased 9-inch round cake pans.
  • Mix brown sugar and cinnamon in medium bowl. Stir in coconut and nuts; sprinkle over cake batter.
  • Bake 30 min. or until toothpick inserted in centers comes out clean. Cool completely on wire racks before removing cake layers from pans.

Make Ahead

Bake and cool coffee cakes as directed. Enjoy one of the coffee cakes now and freeze the other one for later use. Wrap tightly before freezing.

Easy Cleanup

For easy cleanup, line the pans with foil and spray with cooking spray before filling with batter.

Both my husband (who is not a "coffee cake" kind of guy) and my daughter (pickiest eater on the planet) loved it. I left out the coconut and added a few more walnuts, just due to personal preference. I'm taking it to a brunch, and I expect it to be well received!

I brought this on a High school field trip and the teachers and older students couldn't stay out of it. I will Definately make it again. Since oven temps vary, watch baking time you don't want it to over bake it's very crumbly.

I left out the coconut and walnuts as well, and it still turned out delicious! One of the best parts was the wonderful smell as it baked!! I will definitely cook this one up again!
