Making banana bread is a great way to use up over-ripe bananas. Freeze over-ripe bananas, then thaw in the refrigerator before serving. Or, microwave just until thawed.
Need to ripen bananas quickly for a baking recipe? Peel the bananas and place them on an ungreased baking sheet. Bake at 450ºF for 10 to 15 min. or until bananas are very soft. The oven heat acts like the natural ripening process, sweetening the fruit.
Add combined liquid ingredients to combined dry ingredients; stir just until dry ingredients are moistened. (Batter will be lumpy.) Overmixing can result in tough or rubbery breads or muffins. Pour batter into prepared loaf pan or muffin cups. Bake as directed.
