Although I made a few changes in the ingredients. I used mandarin oranges, julienned beets, which I drained, and combined with the onion and dressing. I marinated this in a covered bowl for 2 hours in the refrigerator. Then I tossed it with the spinach and put on serving plates. I sprinkled roasted sunflower seeds and crumbled feta cheese over the top.

The first time, I added the dressing just before serving. All the other times, I have let each guest add their own dressing and it worked out much better. It has now become my favorite green salad for family and guests.

This was totally delicious....I've never had beets and citrus together...but who wouldve though it would be this good...the vinagrette was a bonus...I didn't add the nuts and it was still great.....wonderful meal for those that are watching their weight....Very Very Good......

Rated 5 out of 5 by from Wonderful! Wonderful! A nice, light salad. We prefer to use mandarin oranges as they are just a bit sweeter for my family. In my opinion, make a duoble batch as everyone always asks for more!
