Make sure the grill is hot before adding the steak. A hot grill quickly sears the outside of the steak, sealing the juices inside.
To cook steak under the broiler instead of on the grill, preheat broiler to medium heat. Place steak on rack of broiler pan 2 to 3 inches from heat source. Broil 12 min. for medium doneness, turning occasionally and brushing with the reserved 1/4 cup orange juice mixture.
Marinating the steak with orange juice and the serrano chile adds flavor, while the steak provides a good source of iron. As a bonus, the steamed broccoli served with this delicious entree contains vitamin A and is high in vitamin C.

I recently done a Ribeye like this and I marinated it with orange juice and and little bit of rasphberry walnut vinegarette dressing for 24 hrs. I all so used a bit of Montreal Steak seasoning and this Ribeye was just as good if not better then at a reputable Steakhouse!
