What You Need

pork loin (3 lb.)

cloves garlic, slivered

1/2

cup KRAFT Zesty Italian Dressing

1/2

tsp. ground cumin

Grated peel and juice from 2 limes

1/2

cup orange juice

Make It

PIERCE meat all over with the tip of a sharp knife. Insert the garlic into the cuts in the meat. Place in a bowl or large freezer-weight resealable plastic bag.

MIX dressing, cumin, lime zest and juice until well blended; pour over meat. Cover the bowl or seal the bag and refrigerate overnight. Remove meat from the marinade; discard marinade. Place meat in a foil-lined roasting pan.

BAKE at 350°F for 1-1/2 hours. Pour orange juice over meat. Insert a meat thermometer into the thickest part of the meat. Bake an additional 30 min. or until internal temperature reaches 160°F. Let stand 10 min. before slicing to serve. Serve with juices from the pan.

This marinade can also be used for a pork shoulder or pork leg. Prepare as directed, cooking until internal temperature reaches 160°F.

Have made this recipe many times and my entire family loves it! I do not marinate overnite but mix all the ingrediants and bake as directed. I also omit the cumin as one of my family members does not like that spice. Its extremely flavorful and juicy and we will continue to make this recipe.

This was my first time cooking pork loin. The taste was excellent and the family enjoyed every bit. I thought I was going to have some for lunch the next day. The pork was so tender, that it fell apart with every knife cut. I will try a higher grade of meat next time.
