  • Mix honey, orange juice, mustard and vinegar until well blended; cover. Refrigerate until ready to serve.
  • Layer lettuce, spinach, cucumbers, onions, oranges and shrimp on large serving platter.
  • Sprinkle with pecans and drizzle with honey mixture just before serving.

How to Toast Nuts

Preheat oven to 350°F. Spread nuts in single layer on baking sheet. Bake 5 to 7 min. or until lightly toasted.

This grand shrimp salad recipe is not only simple to make for a quick evening meal, but also the contrasting colors of oranges, spinach and red onion look elegant on my fine china! I like the contrasting sweet and sour tastes of the mustard, honey, orange juice and balsamic vinegar! I love big, jumbo shrimp - cooked just tender (gotta use cajun boil to season the water!) The pecans - I love the crunchy, nutty flavor. ( In Fort Worth, I use pecans that have been roasted in a chili powder blend!) I couldn't help but add my favorite soft sweet goat cheese in crumbles after I blended the salad together. Just delectible! Janie

I left the onions out because I don't care for them. My teenage son used a different dressing because he preferred that. He used the kraft light balsmic vinegrette I think. This isn't one of my favorite salads, but it was very good and a nice change. I will be making this one again.

I added 1/2 Pt.Fresh raspberries,mandarin oranges and 3 tblsp of orange marmalade to the dressing.I doubled shrimp,added crabmeat,fresh mushrooms,celery,and various lettuces. I loved the way you can add to an original recipe. The people at the BBQ were thrilled with it.
