For a spicier dip, stir 1 chopped seeded serrano chile into the sour cream mixture with the grated radishes.
Radishes can vary significantly in size, shape and color. The most common variety is the globe- or oval-shaped red-skinned radish. Choose radishes that feel firm to the touch; if leaves are attached, they should be green and crisp. To store, remove leaves and refrigerate in a plastic bag for up to 5 days. Wash radishes and remove root ends just before using.
To make radishes crisper, soak them in ice water 2 hours before serving.
