  • Heat oven to 325°F.
  • Combine coconut, white chocolate, sugar, flour and salt in large bowl. Add egg whites, lemon zest and almond extract; mix well.
  • Drop by tablespoonfuls, 2 inches apart, onto lightly greased and floured baking sheets.
  • Bake 20 min. or until edges of macaroons are golden brown. Immediately remove from baking sheets to wire racks. Cool completely. Drizzle with melted chocolate.

How to Drizzle the Melted Chocolate

Melt chocolate as directed on package; spoon into resealable plastic bag, Cut small piece off one bottom corner of bag. Use to drizzle chocolate over cookies. Refrigerate until firm. (Or, use small spoon to drizzle melted chocolate over macaroons.)

Rated 4 out of 5 by from I made these for Christmas this year. I made these for Christmas this year. I loved them even though I don't really like coconut. If you do not want the lemon-ey taste, I would reduce the amount. I did not use white chocolate, instead just used the semi-sweet and I'm sure they tasted just as good. Baking 20 minutes seemed a bit too long, I would start checking them after 15 because they start browning early and that makes for easy over baking.

YOU HAVE TO BEAT THE EGG WHITES TO A SOFT PEAK FIRST, BEFORE YOU MIX WITH THE REST OF THE MIX. This is not included in this recipe. I made this recipe for the first time and just added the eggs and it came out terrible. I looked up a similar recipe on another website to find out what went wrong the first time around. The second time I made the cookies they turned out great.

Rated 5 out of 5 by from This is one of my favorite holiday cookies I made last year. This is one of my favorite holiday cookies I made last year. I'm very excited to make it again this year. It is absolutely delicious. Only thing I would suggest is to push in the edges of the cocokie a bit with the spatula once it comes out of the oven. Mine spread a bit too much and this helped not too lose too much when removing from the cookie tray.

The funny thing is that everyone at the cookie swap loved them. I want to fix the recipe and do it again but everyone else said they are doing it the way I did it....

I had the same problem - the batter spread out around each cookies and I ended up with a lump in center and white thin edge - I ended up using kitchen shears to cut it off but everybody loved the cookies. I don't know what to do to 'thicken' it but I'll experiment with it a little.

These are so good, the right combination of flavors, delicious!!!
