Use the edge of a bowl scraper or spatula dipped in flour to cut the dough into triangles as directed. To prevent the dough from sticking, dip the scraper into additional flour between each cut. Be careful to not use a sawing motion as you make each cut since that will prevent the scones from rising as they bake.
