After unmolding, fill center of mold with salad greens and your favorite cut-up fresh vegetables, such as carrots, celery and cucumbers.
The tomato juice in this classic salad is a good source of vitamin A and, as a bonus, provides vitamin C.

Another variation...leave out the sugar and worchestershire sauce. Use V-8 or other veg. juice. Pour 1/3 inch of aspic mixture into a flat pan or Pyrex dish, chill until almost set, then arrange avocado slices and slices of Large pimiento-stuffed olives on top of aspic layer. Spoon rest of aspic over the veggies, and chill until set. Unmold onto serving platter. Mix equal amounts of Mayonnaise and sour cream for dressing. A pinch of horseradish may be added if desired. Traditional Christmas Salad in our family.
This is a variation of a classic Jello recipe my mother used to make, but she made it with lemon jello & tomato juice. (Adding sliced cucumbers & green onions.) It is one of my favorites! And healthy!
