  • Layer first 5 ingredients on tortillas; fold in half.
  • Heat large nonstick skillet on medium heat. Add quesadillas, 2 at a time; cook 2 to 3 min. on each side or until lightly browned on both sides. Cut into wedges.
  • Serve with dressing.

Serving Suggestion

Serve with fresh fruit to round out the meal.

I'm trying to keep the family on a lower carb diet, so I used low carb tortillas and turkey bacon. If you're really in a hurry, make your bacon ahead of time. Another helpful hint - use one tortilla in the skillet, let each person put their favorite veggies and meat in and then just fold it over. Much easier than trying to flip it in the skillet!

Make sure you use the ready to serve bacon when you make this becasue is you use regular bacon and cook it first you quesadilla get way to greasy. Also I would reccomend that you make the quesadillas in a George Foreman Grill or a Quesadilla maker if you have one they burn to easy in the skillet and were hard to turn over. I also reccomend dipping them in Ranch dressing very tasty.

I made a variation of this.....I used can chicken breast with a pack of bacon crumbles. I put bbq sauce, the chicken and bacon with a few handfuls of cheddar in a bowl and mixed it all together, then I put the mixture onto the tortillas with a little extra cheese and cooked till melty. Dip in same bbq sauce.....So good!

I cut up the extra ingredients and they just add what they want, like green onions, jalapenos, etc. And it is easy enough that my older kids can make it on their own. (It is also a good, heallthy afterschool snack.)

I haven't made it in a while and was excited to find it on here to remind me to make it! It is really good and so easy. It makes a yummy and fast supper which is great especially in a time crunch.

I used sour cream though instead of miracle whip due to the fact that the guys in my house seem to be afraid of mayo. This has become a regular dish in my house. :)

If you are making more than a couple, you can do them in the oven--place on a cookie sheet sprayed with a cooking spray, bake at 350 degrees for 15 mins or until cheese melts. Yumm!

Rated 5 out of 5 by from Excellent! Excellent! My kids loved these. We tried this recipe with chicken, also. Chicken was good, but the turkey with the bacon was much better. Super easy and fast. I served them with guacamole and sour cream - great combo.
