Prepare and assemble skewers as directed. Heat broiler. Broil skewers, 6 inches from heat, 3 min. on each side or until meat is done and vegetables are crisp-tender.
Prepare using lite coconut milk.
Serve over hot cooked long-grain brown rice.
If using wooden skewers, soak skewers in water for 30 min. before using to assemble kabobs to prevent them from burning on the grill.
