  • Heat oil in large skillet on medium-high heat. Combine chicken, curry powder and pepper in small bowl. Add to skillet; cook 2 min. or until lightly browned, stirring frequently. Add beans and broth; bring to boil. Cover. Simmer on low heat 5 min.
  • Combine coconut milk, dressing, peanut butter and soy sauce. Add to skillet; cook until mixture just comes to boil. Simmer on low heat 5 min. or until chicken is done and beans are tender, stirring occasionally. Stir in 2 Tbsp. cilantro.
  • Serve chicken mixture over noodles; sprinkle with coconut and remaining cilantro.

How to Toast Coconut

Toasting coconut is easy. Just spread BAKER'S ANGEL FLAKE Coconut evenly in shallow baking pan. Bake at 350°F for 7 to 10 min. or until lightly browned, stirring frequently. Or, spread in microwaveable pie plate. Microwave on HIGH 3 min. or until lightly browned, stirring every minute. Watch carefully as coconut can easily burn!


Substitute vermicelli noodles for the cellophane noodles, which are also called bean thread noodles or glass noodles.


Substitute 3 cups drained thawed frozen green beans for the fresh green beans.

Lite Coconut Milk

Be sure to choose the right product. Lite coconut milk is made from water and coconut, which has been strained. It can usually be found it in the international section of your market. Coconut milk is not the milky liquid you find when you open a fresh coconut, nor should it be confused with cream of coconut, a sweetened coconut product that's often used for desserts and mixing drinks such as pina coladas.
