  • Heat oven to 350ºF.
  • Combine vegetables; spoon onto centers of 4 large sheets heavy-duty foil. Top with fish.
  • Mix dressing and garlic until blended; drizzle over fish. Fold foil to make 4 packets.
  • Bake 22 to 25 min. or until fish flakes easily with fork. Cut slits in foil to release steam before opening packets.

Rated 5 out of 5 by from Excellent! If you are a fan of fresh cod (or even his salty, Latin alter ego, bacalao) stop what you're doing and make this. I know, I know-- I didn't think it would be that great either...but we're WRONG. I made the recipe exactly as written with one change: I didn't have that light dressing on hand so I went full fat, baby. Oh. My. GOODNESS. Make some rice or something to go with it, because the broth made by the fish, dressing, and juices from the veggies is just so good, you need something to sop it up with.
