  • Heat oven to 325°F.
  • Mix crumbs, 3 Tbsp. sugar and butter; press onto bottom of 9-inch springform pan. Bake 10 min. Increase oven temperature to 450°F.
  • Beat cream cheese and cottage cheese in large bowl with mixer until blended. Add 1/2 cup sugar, flour and vanilla; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.
  • Bake 15 min. Reduce oven temperature to 250°F; continue baking 1 hour. Run knife around rim of pan to loosen cake; cool before removing rim. Cool completely. Refrigerate 4 hours.

Rated 4 out of 5 by from The flavor is great. The flavor is great. Not as sweet as a lot of cheesecakes. As for the texture, I think the next time I make it I might use a blender for the cottage cheese first as it did not get all the way smooth just using the mixer. That might incorporate too much air so would let the cottage cheese sit for a day in the fridge to "let the air out." I like more crust so will probably double the crust ingredients too. I topped with cherry pie filling and everyone enjoyed at a dinner party I attended.
