Corn muffin mix is laced with cottage cheese, corn kernels and bits of red pepper and green onions for savory muffins to serve with chili or soup.

pkg. (8-1/2 oz. each) corn muffin mix

tsp. ground red pepper

can (11 oz.) whole kernel corn, drained

cup BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
1/4
cup milk
2
 eggs
2
 green onions, sliced
1
medium red bell pepper, finely chopped

Make It

MIX muffin mixes and ground red pepper in small bowl; set aside. Mix remaining ingredients in large bowl. Add muffin mixture to corn mixture; mix well.

SPOON batter into paper-lined muffin pan, using 1/4-cup measure.

BAKE at 400°F for 25 minutes or until golden brown.
