Substitute 2 cups thawed frozen cauliflower florets, frozen peas or shredded sweet potatoes for the carrots and zucchini. Or, use your favorite vegetables, shredded or finely chopped.

I make something similar making the mac n'cheese per box instruc. but I also brown a lb. of hamburg w/a small diced onion, drain off fat, add a can of petite diced tomatoes and then add the prepared mac n'cheese. Delish! My grans love it!
This is an easy way to work veggies into the meal.
